Sundays are for napping, running, and more cooking

First—6.5 miles on the trails!! This is the first time the weather has cooperated in 3 months. I live in Alabama, and it’s rarely this cold and wet for so long. The trail was really worn out from all the ice and melting ice. But, with half marathon training underway, I needed a place to get started on some elevation and technical trails. It was AWESOME!!

After a nap, it was time to throw together some things for next week.

First, Quinoa with roasted vegetables.

Add to quinoa, and add some fresh parm/reggiano

Dish #2 Cauliflower Au Gratin.

I found this over at Paula’s site.

Make a white sauce with butter, flower and milk. I lightened this up with skim evaporated milk.

Fresh ground nutmeg makes a big difference. It takes this from bland to savory.

Layer steamed cauliflower in a shallow baking dish. I, of course, had to use my new Le Creuset stoneware.

Bread crumbs and fresh parm grated on top. Bake at 350 for 30 min.

I watched the USA/Canada game. It was exciting!!! Congratulations to our neighbors to the north.
