I love a good breakfast recipe that is great for reheating during the week and easy to carry to work. So many days, breakfast really happens after I get to work and while I love basic bacon and eggs, I do like a little variety with breakfast casseroles.
I decided to try this Sunrise Scramble from Melissa Joulwan of Well Fed and Well Fed 2. Her recipes are so down-to-earth and fun to make, but what sets her apart from others is her ability to mix and match flavor profiles. She has a wide variety of recipes for spice blends and they just work. On a busy week night, I often don’t feel too creative. That’s when I know I can pull out a Melissa recipe and I know it will be a great meal.
This is quick and easy because it just takes one big skillet. Brown your meat, add some veggies and that fabulous Sunshine Spice (from the cookbook!) and let it practically make itself. This is in the Well Fed 2 book so if you do not have it yet, GET IT!
