Fuel for the day

One thing I have missed lately is eating good food. I’m finally back in a regular routine of cooking and eating better at dinner, but breakfast and lunch is still either non-existent or at the mercy of the school cafeteria. This morning, I woke up at 4am and could not go back to sleep, so I got up and cooked a metric ton of food. I went to sleep early last night so I guess my body was done with sleeping and giving me a huge sign that I needed to eat real food real soon.

First..high octane stuff. No sugar, plenty of fat and flavor.

Next I made 2 breakfast casseroles. One was a southwest chicken+veggies with eggs. The other was a more traditional potato+sausage+eggs casserole. Stephen is tired of cereal and I wanted to have plenty of grab-and-go servings for both of us. No more excuses for leaving the house without breakfast. I have the fancy pictures with the recipe later. I’m using phone pics early for this post because I’m exhausted and I like writing daily posts lately.

While those 2 casseroles were in the oven, I cut up my pan of brussels+bacon and threw them in for about 20 minutes. I absolutely love roasted vegetables and at 4:30am, the house was cool enough to run the oven. I do believe fall has arrived!

Next in the oven were these beauties. Sweet potatoes with coconut oil and cinnamon.

My lunch was huge! I had herbed chicken thighs from Sunday along with my Brussels and potatoes. I could eat meals like this every day and I have genuinely missed healthy real whole food.

In my (large) lunch bag, this is lunch, snacks, and more snacks. I will be at school from 6:30-5:30 and I can’t live on lunch alone. I do not have time to really eat a big meal. I’m lucky if I get 10 sit-down minutes. I just can’t shovel food that fast. That’s why I have a lot of portable food and the best packaged food I can find that is not full of junk chemicals.

And finally, I’m out of the house with 2nd cup of coffee to go. Love the foam!

And how could I have gone this long without eating my beloved almond butter?? It tastes like every great childhood food memory. Peanut and almond butter can bring about world peace, I’m convinced.

It’s been a FANTASTIC DAY! I had plenty of food, school is so much fun these days, and the sad moments are not as often or as intense. I think I’m finally working on the other side of the huge black hole I was in a few days/weeks ago. I’m trying to take my doctors’ orders and keep at it consistently. Ready for tomorrow 🙂
