Final stop—Marble, Colorado

Blackened Fish Sandwich on a wheat french roll. This is right up there with fish tacos. They used a dill cucumber yogurt spread instead of mayo. It was light but very filling.

The last two days were spent travelling home and I ate/grazed on fruit, nuts, granola, and peanut butter crackers. After the past few days, it’s safe to say that keeping a food blog definitely made me enjoy the various foods in Colorado. I deliberately looked for healthier food and forced myself to try new things (hello…FISH TACOS!!!) and expand my tastes in healthy food. No, I didn’t eat Elk, but I’m taking baby steps 😉
