Bear Lake and some more Nachos

I have never seen an interior lake look so much like the blue waters of a Caribbean island. I couldn’t stop looking at the color of this water. This is Bear Lake in northern Utah.

Before we got to the shore line, we stopped up at the information lookout. Grabbed a selfie.

After the the lake, we found Logan, UT which is where Stephen’s company is located. We toured the town and ate lunch there. This was the most authentic Mexican restaurant called Paco’s Mexican Food. These are the “chips n salsa”. They had a salsa bar. These are the chips. Look at all those veggies. And I ate the raw tomatoes. The salsa was so good with these loaded chips. It took a few minutes to make our dinner since they make every taco, burrito, and chimichanga from scratch. Let me tell you, the wait was entirely worth it. Hot spicy food that has distinct flavors. It wasn’t that fast food, everything tastes the same type of place.

And these were my carne asada beef enchiladas. Outstanding flavors.

After loading up on chips and enchiladas, we walked around a bit then drove into Idaho and Wyoming. Spontaneous road trips are common with us. It’s usually Stephen who says “Hey! Let’s go do this”. I don’t complain a bit. Smile
