I’m trying to sort of THINK about getting back into a cooking and organizing routine so I can ease back into the chaos of teaching. This week, I went to the Farmer’s Market at 10:30 am because I stayed up until 2am and slept until 10. Well, that was stupid. All that was left at the market were peaches and tomatoes. We have tomatoes and I don’t need peaches. Peaches lead to peach cobbler. Peach cobbler leads to a bleacher sized butt. No thanks. Next week, I’ll be there early!
Oh and Whole 30 starts on Wednesday. Why Wednesday? Because Monday is so predictable!
Sunday: Stephen was off work AND we are now back in our new church building in central Tuscaloosa!! We went to services and then to my favorite Mexican restaurant. I had chorizo Mexican tacos. Soft corn tortillas, spicy chorizo, and cheese dip.
Monday: Salmon, sweet potatoes, and broccoli.
Tuesday: Grill time! Steak, potato, onions/mushrooms/asparagus.
Wednesday: Eggplant Bolognese. Fancy for spaghetti sauce over roasted eggplant.
Thursday: Roasted Pork loin with mashed cauliflower, asparagus.
Friday: Salads with herbed chicken thighs.
SPEEDWORK WEEK!!!
Ugh. I hate track. I hate track. I hate track. But I love running, so it goes with the program. I have new tunes and nothing to lose but sweat.
Monday: 8 x 400m with 400 Rest Interval
Tuesday: 8x 400m with 400 RI
Wednesday: 5 x 800m with 400 RI
Thursday: Full rest
Friday: 5 x 800m with 400 RI
