It’s that time of year again. I’ll admit, I am looking forward to getting back to a regular school/work routine with meal prep weekends, race training weekends, football weekends, and well…weekends!
This week, It’s a mish-mash of what I have left in the freezer and what I can stretch from the produce drawer. Payday is Thursday so I’m getting creative!
To throw another kink in the chain, I’m not doing weekly meal prep until tomorrow night. Everything I need to prep is in the freezer. I’ll go work in the classroom until early afternoon and then do my meal prep later after Stephen goes in on night shift. Next weekend, I need to have all my ducks in a row because I report to work for real on Monday, Aug. 4
This week, lunches will be mostly leftovers or random Things on a Plate (or napkin). I have some fruit, trail mix, and jerky left from Colorado and I’m putting in a big order for more jerky and granola after payday. I need to carry portable stuff to school but nothing that requires a microwave since it will not be ready. My goal this week is to move back to Whole 30/strict Paleo and conquer the summer vacation sugar that is still hanging around. I perform physically and mentally better without sugar and high grain carbs (corn chips….I’m looking at you) so this week is a big reset.
I’ll have recipes for dinner each night available. This is my tentative plan, but I am expecting 2 advance release cookbooks for review any day now. My menu for dinner may change OR I may delve into a cooked hot lunch later in the week.
