I love vegetables. I really do. I often find myself trying to sneak them into everything, including my smoothies, but that’s another story. I wanted pasta, but I can’t really eat just pasta. The more protein I can add, the better. Spinach is a wonderful veggie to add to pasta. It wilts down to nothing, so I start with a heaping 2 cups of fresh leaves.
Chicken, farfalle pasta, spinach, and trimmed down parmesan sauce. The sauce is evaporated skim milk, greek yogurt for creaminess, and a little fresh parmesan mixed in, a little to sprinkle on top.
