I have no idea what to do with the golden beets except grill them in the grill pan and search high and low for a recipe. I’m going to conquer this beet thing I have. I promise!

The rest looks wonderful. With the weekend coming up, I suspect we will have plenty of salads.  The wax beans will be a first for me. I have no idea why they are called wax beans, but I’ll enjoy finding out and experimenting with cooking them.

In other garden news, the herbs are doing great! The basil has some yellowing leaves and I don’t know why. The rest of it is full and green. The mint is settling nicely in its own pot. I’m using the parsley so fast that I hope it grows back to keep up with the demand. Fresh parsley is just so good in most anything I’m cooking.

And the tomatoes are getting bigger! I’ll show some “after” pictures soon. My cherry tomatoes are getting so tall. I used the last jar of roasted cherry tomatoes that I made last summer so I’m ready for some new ones.

Welcome summer, even if the calendar hasn’t caught on yet.
