I bought a TON of veggies and meats and eggs at the Pepper Place Market this weekend. And so my food prep this week is short. And not quite finished….
Here it is.
I cooked a bunch of boneless skinless chicken thighs. I have a lot of various salad mix greens and I’ll use this chicken with my other veggies for meat salads and sautes’. I also have some frozen soup that I need to use up since I have 2 weeks of school left.
After I worked long and hard to make this chicken, I whipped up my favorite way to eat eggs lately.
Garlic lemon spinach with 3 eggs.
