I love dried peas and beans, but hate the whole soak all night, cook an hour thing. Little did I know that I could put them in the crock pot on low all day and they would cook perfectly! This recipe takes 5 ingredients.
- boneless pork chops (could use bone in)
- 2 cups of dried black-eyed peas (use any dried pea or bean)
- diced onions
- 4 cups of chicken or beef broth
- seasoning of your choice. I used poultry seasoning.
When cooking dried beans, make sure you have double the liquid. If you are cooking for a crowd, use 3 cups of beans and 6 cups of liquid. Beans will take up a lot of liquid and they will scorch in the pot if they run out.
