I love salad in the summer. Unfortunately, I often find myself in a huge salad rut. I’m not crazy about mixing my fruit and acids together on a bed of lettuce so that nixes out a lot of things. I do branch out with my greens and make my own dressings, but since I hate tomatoes, raw onions, and other salad staples, I’m often left with lettuce and cheese. That’s not quite the healthy plate I’m trying to accomplish.
Today, I decided to add some fat and protein to my lettuce and cheese. It was FABULOUS. The only dressing I needed was oil, vinegar, and lemon juice. I added some red beans, corn, and olives to my lettuce, cheese and cucumbers.
My only problem…I have no idea how to make a small salad. I just can’t do it!
