Fall and Friday.

Two of my favorite things.

And I’m going to enjoy this day despite the nagging headache and itchy eyes. :). This weekend is so full of good things I can only be excited and thankful. The first fall weather is roaring in this morning and by tonight, I’ll be wearing my Alabama sweatshirt. Tomorrow is a trip to Birmingham to the farmer’s market, Whole Foods, the spice store, and search for drawer pulls for my new dish cabinet that Stephen is working on. Gumbo. Game. Win. Huge smiles. Now if only the crimson tide can pull off the win. That part is crucial to the happy weekend.

Sunday will be a rest at the dr for more fluids and tests. I’m recovering very slowly but I am recovering from Rhabdo. My CPK levels were 12,000 and he gave me a rest until Sunday.  And I fully intend to bring a pillow and blanket to my bat cave and get a nap while the fluids are going. I have no shame when it comes to my Sunday naps.

Last night for dinner, I wanted something healthy. I’m more aware of nutrition right now (and I usually am more conscious of food…but more than ever right now) because I can’t burn off any treats or celebration dinners. I went with steak stir fry. Orange Beef.

1. Add vegetables to 1 T of sesame oil. Cook quickly stirring constantly

1. Remove vegetables to a plate and keep warm. In same pan, quickly saute thinly sliced beef. I marinated mine in soy sauce, beef broth, orange juice. I let it sit for about 30 minutes. Pour the beef and sauce in the pan and cook until almost done.

3. Make the rice according to directions. Add sliced green onions after it is done and stir.

4. Return vegetables to beef in pan and mix well. Serve. Top with orange zest.

I’m so ready for today. And this weekend. I want to go by VERY SLOWLY so I can enjoy the outdoors, the family, the solitude, and the rest. I need it if I want to run again anytime soon.
