Remember previous posts about Fish tacos? I wondered just how good shrimp would taste in the same manner. Since it was on sale, I felt like experimenting with shrimp tacos. Don’t get me wrong, I still love my garlic lemon sauteed shrimp. But lately, I’ve been using a lot of local produce in my food. Fruit used to be something I grabbed as an afterthought. Something for dessert. Alone, all by itself. I’ve never really used it in dinner. After the mango salsa I had in Colorado, I’ve been hooked.
All that above sounds good, but if I really got honest with myself, I’m craving mango. LOTS of mango. I needed another reason to use it. And I had the shrimp, so there you go.
Mango Salsa
- 1 cut up mango
- chopped pablano pepper
- red onion
- garlic
Shrimp
- pepper
- garlic
- olive oil—just to coat for pan
- chipotle seasoning
Assemble tacos:Tortilla, sauteed shrimp, salsa, chopped tomato, fresh corn, cilantro, drizzle of chipotle ranch.
