It’s no big secret that I’ve been working hard on some changes to my diet and cross training. I’m running regularly, but I haven’t been reaching the higher mileage because frankly, I’m tired. I’m working out 4-5 days a week in heavy lifting and various cardio cross training and I do enjoy that.
But I knew I needed to change the sugar. I will never be 100% sugar free because fruit has sugar and I’m not crossing off any food that grew from the ground or had a momma..except beets and swamp animals. Sugar is in a LOT of things, but I’ve eliminated 90% of what I was consuming 2-3 weeks ago and I am amazed at how much better I feel. Is it al in my head? Maybe.
But I don’t care.
I feel better about myself knowing that I’m giving my pancreas a big sigh of relief and a rest from constantly trying to sputter out some insulin. My pancreas is tired and broken down, and I need it to last as long as possible, even if it has a bad thermostat.
Now, on to the food for the past 3 days. I’ve made some good stuff lately. I have 2 new cookbooks that are right up my clean eating alley. But none of these dishes came from those cookbooks. I’m really just excited that I have new cookbooks.
Tongue-singeing White Chicken Chili. 1 Jalapeño with seeds and 2 full Pablano peppers do not make Jane a dull girl. This stuff made me sweat. And that potato trick was worthless. It was still just as hot. I needed the Real Men Of Genius Blue Aluminum Bottle Maker to bring me something. I really did feel like I was running wind sprints on the bottom of an active volcano.
- 1.5 lbs of chicken breasts
- 3 cans of white beans
- a few cloves of garlic
- 1 cup of onions-chopped
- 1 jalepeno pepper—NO SEEDS!
- 1 pablano pepper- NO SEEDS!
- 4 cups of chicken broth
- seasoning of choice. I used Penzey’s Adobo and Chili Con Carne
Cook chicken with seasonings in pan. In Large stock pot, saute veggies until onion is translucent
In a small bowl, pour 1 can of beans. Use a fork or potato masher to smush to oblivion. Add to pot along with chicken, broth, and other 2 cans of beans. Cook an hour or so.
OR
Cook chicken. Put in crock pot. Add veggies (no need to saute’). Smush 1 can of beans. Add to crock pot along with broth and other 2 cans of beans. Cook all day on low.
Potato Frittata
- 8 eggs, whisked up
- 3-4 small red potatoes
- sausage of choice-pork or chicken or turkey. Cook sausage.
- Kale
- onions
- garlic
- chopped tomatoes
- cheese of choice. I used bits of goat cheese.
Get one pan the size you want your frittata. Make sure it is oven proof to 350* I used a ten inch pan
In small saucepan, cook potatoes while other stuff is cooking. Boil on med-low heat approx. 15 min.
Cook sausage. Remove to bowl.
Cook tomatoes, garlic, onions, and kale. Cook until Kale is wilted. Remove to bowl.
Slice potatoes.
In frittata pan, layer the following:
- potatoes
- sausage
- veggies
- Pour eggs over this
- add cheese
Cook over low-med heat until center is beginning to set. Finish in oven 15-20 minutes on 350*
Lunch Monday
The day is so much better when I have my food. If I leave the house at 5am and not return until 5pm, I need a lot of meals and snacks that I can depend on.
- mocha shake (protein powder, cocoa powder, banana, pb, coffee, milk). The protein powder has Stevia. No sugar in the rest except milk. Cocoa powder is my lifesaver lately!
- carrots, yogurt dip
- cucumbers, pumpkin salsa
- Siggis and granola
- Oatmeal with flax, bee pollen. PB and granola to add.
- slice of frittata
- Insanity on the Tongue White Chicken Chili and 3 bottles of water to drink with it. I may take a garden hose if I can fit it in the car.
- random tangerine and pear

I need at least something sweet everyday. I don't have a huge sweet tooth, but I LOVE chocolate. I must it daily ;)

That's great that you feel better. I need to try to decrease my sugar consumption too.
