It’s the last week before my birthday and the first week of a new Dietbet and the first week of a strict Paleo plan. There is a lot going on this week! I did all my meal prep earlier today so let’s hope this week is a breeze.
Meal prep:
- huge pot of chicken soup with kale
- roasted sweet potatoes
- grilled chicken thighs
- bowl of sautéed cabbage with carrots
- chicken salad made with my own mayo.
Sunday: Orange Shrimp with squash “noodles”
Monday: BREAKFAST! Bacon, eggs, and a smile.
Tuesday: Crock Pot Beef Stew with smashed white sweet potatoes
Wenesday: Salmon with asparagus
Thursday: Pork loin with sausage and vegetable stuffing, smashed cauliflower
Friday: Camping food!!
Time is flying by. 10K race this weekend, half marathon in 4 weeks!
Monday: AM CrossFit, PM 3 miles
Tuesday: AM CrossFit, PM 4 miles
Wednesday: AM CrossFit, PM 6 miles
Thursday: Full Rest
Friday: AM CrossFit, hiking at camping trip
