I can’t believe this is the LAST WEEK of Whole 30. Actually, the last 2 days. Tuesday will be day 30. I am ready to weigh and check my measurements. I know pants are looser, but I can’t tell anything else.
For dinners (and lunches..assuming I don’t leave my lunch bag again), I’m looking forward to trying some new recipes from Make It Paleo 2 which came in the mail last week. When I flipped through it, I found a dozen or so recipes I wanted to try right then. I have 3-4 picked out for this week.
I’m also sticking to a few tried-and-true meals like salmon and crock pot beef stew. Winter is still here and I’m going to enjoy all the soups and stews that I can get by with. Stephen isn’t the biggest fan of soup in July when it’s hotter than Hades.
Here is my meal prep for the week:
- Roasted sweet potatoes
- Home Fries
- Breakfast skillet with sausage, spinach, potatoes, egggs
- Stir fried cabbage and carrots
- Grilled sausage and peppers
- Breakfast sausage patties
- Grilled chicken thighs
