The last FRIDAY!!

If I can get through this day, I might weep tears of joy. We have the school play this afternoon. I was asked to play the character of Paula Abdul in the American Idol type play with a ton of cute kids dressed as dinosaurs and performing dino-type musical acts. Totally cute and adorable and many pleased parents came out last night to watch their dino-stars. The encore production is this afternoon. I have to get my “Paula” character in gear!

But first, Paula needs food. And I needed something quick.

Target has this wonderful line of flavored rice from Archer Farms. I got the Thai flavored one with vegetables and added some chicken to it. This took 10 minutes and I devoured it!  The only thing I didn’t like was the sodium. We are on a very low sodium diet due to Stephen’s inner ear problems. As long as his sodium levels are low, he doesn’t have problems with vertigo. I naturally transitioned to lower sodium cooking and eating, so I’m very sensitive to salt.

This weekend, I’m going back to Pepper Place to stock up on fresh vegetables. I’ll buy what looks good and decide the menu from there. I’m really enjoying buying more local and eating based on what is in season. And I also like knowing that Alabama and “the South” can offer such a wide variety of farm-to-table foods and at very competitive prices. We often get stereo-typed for being nothing but unhealthy fried everything, but the locovore movement is spreading quickly and it’s about time.
