Saturday night—can’t sleep

My mind is wide open lately. Lots of school stuff is going on and reflecting back on the past year—wondering if this year will be better.

Anyway, I have never tried Orange Beef.

Now I have

And it’s good.

 

The sauce:

  • 1/2 C beef broth
  • 1/4 C orange marmelade (I used a no sugar added, all natural Palmers)
  • 2 T low sodium soy sauce

Sauté broccoli and onion, set aside

Cook beef strips

Mix all back together and serve with brown rice.

While I was cutting up stuff, I had a Rachael Ray moment. I decided to cut up the vegetables for the quiche I planned to make Sunday. I need to do things like this more often to optimize my time on the weekends. During the week, I’m wasted by the time I work out and get home. I live for the 2-4 hours of downtime from work.

I still had broccoli on the knife. This pepper was good and sweet!

I cut up the pepper, broccoli, and carrots. I had the other stuff close at hand so my prep was a no brainer.
