When I first met Danielle Walker at Paleo F(X) in April, I was so star-struck, I don’t even think I told her my name. I just rattled on about how glad I was to meet her and how much I loved her book Against All Grain. I may have mentioned that she is the only person in the world who convinced me to use a mandolin. And eat curry. This woman has powers, people.

When her latest book, Meals Made Simple: Gluten Free, Dairy Free and Paleo Recipes to Make Anytime arrived, the timing could not be better. I was dealing with personal heartbreak and I use cooking and photography to work through the hardest of times. Since breakfast has been the hardest meal to handle the past week, I started with breakfast recipes. Danielle has this unique way of taking common ingredients that can be found in many grocery stores or markets and creating something special that I can feel good about feeding my family. I love eggs. I love vegetables. Putting them together in this Autumn Harvest Breakfast Skillet is a fantastic way to make eggs n’ veggies extra special. These days, I’m looking for the extra special.

The second recipe falls under one of my favorite appliances, the slow cooker. This Overnight Breakfast Casserole takes just minutes to prepare. The slow cooker does the rest. It is very hearty and still versatile enough to use with a variety of vegetables that I already keep on hand.

Meals Made Simple is exactly that. Easy to cook meals that are nutritious but so full of flavor. These are not too elaborate or full of hard-to-find ingredients. Danielle gives tips for substitutions, intro pages full of information on starting a Paleo journey, stocking a Paleo pantry, and great meal plans. I love doing my own meal planning. But these next couple of weeks when my heart is healing and my mind is all over the place, I’m letting Danielle plan for me. I’m just going to follow the directions and take comfort in the cooking process and getting a good picture. When I think of healthy,  beautiful, and flavorful meals, I think of Danielle Walker.
