Long day, easy dinner

Wednesdays have a new meaning for me. Since I started teaching after school, I do not get home until 5:30-6:00 pm. I teach Tuesdays, Wednesdays, and Thursdays to first graders after my regular day of teaching kindergarten. Coming home on Wednesday REALLY feels like topping a hill and now I can look forward to going back down.

All I want to do is run a couple of miles to take the edge off the day and find quick food. Because Stephen is working the middle of a 2-week steel mill shutdown, he’s exhausted and only wants to shower and sleep. He doesn’t feel like eating a big meal after spending 14 hours in a vent shaft so he opted for chips and salsa. He loves is job the rest of the year. These 2-times-a-year shutdowns are brutal and he’s in survival mode.

I have done a pretty good job of weekend meal prep lately, so tonight was an easy dinner. I did a quick saute’ on some kale with Tessemaes lemon garlic marinade. I had the sweet potatoes and chicken from Sunday meal prep. I put those in the oven for a few minutes and dinner was ready in 15 minutes.

I ran 3 miles on the dreadmill and did them easy and slow. I don’t do much huffing and puffing lately and I’m fine with that. I won’t be breaking any records in Savannah in November and again, I’m fine with that. I’m just glad to be running again.
