Lazy day

It’s been a ROUGH week at school…and the kids were only there two days! It was fun seeing them again and getting back into the schedule for an intense few weeks before spring break rolls around. Apparently, this is going to be the Winter That Wasn’t, so I’m trying to hide my devastation of no forecasts of snow by pretending to look forward to spring. It’s not working. “Spring” in the South lasts about 3 weeks and then we have 6 months of summer humidity hell to escape.

My morning started at 5am when I got tired of coughing and got busy cleaning up some dishes. I went back to sleep at 7 and finally got up for good at 9. I’m going to forget the past 3 or 4 days and enjoy my brief escape from work stress.

First thing I needed was food. In my bowl that may channel some snow vibes from Canada.

oats

  • 1/2 cup of old fashion (not instant) oats
  • 1/2 cup of water
  • 1 T almond butter
  • 1 T pumpkin butter
  • 1/4 cup cranberry granola

1. Heat water to almost boiling, add oats, and cook 5 minutes on med low heat.

2. Add everything else.

I feel another nap coming. My to do list is getting longer but I can’t concentrate or keep my eyes open.
