It’s the Monday before Christmas. I have had 2-3 weeks of the most delicious and most unhealthy sugary fried foods and I haven’t felt one bit of guilt about it. Why? Food is an inantimate object. Attaching guilt to food is useless. Attaching guilt to my actions with food is just as useless. I will absolutely enjoy every minute of the holiday season because I know I stick to a fairly dialed in eating plan for the rest of the year, even while on vacation.

However…I was craving something light and easy on the stomach today. Last night, we had barbeque, rich soups, and decadent desserts. The night before..the same thing. Friday night was a post-school-semester celebration at my favorite Mexican restaurant. Let’s not talk about all the stuff last week in the teachers’ lounge. So today, I wanted green stuff.

I used my new Blendtec to whip this thing up in less time than it took to put all the ingredients back in the freezer. What I loved was the “smoothie” setting. It starts out with a slow bend to begin chopping the frozen pieces. Then it went faster to blend the spinach. And the last 10 seconds was highest to make sure all seeds, stems, and orange pulp were blended into the smoothest consistency.

With this blender, the liquid is first. Then Solids. Then Frozen. Then Greens (if they are fresh). Frozen greens go after the solids.

Grinchless Green Smoothie

Grinchless Green Smoothie

Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Ingredients

  • 2 cups frozen spinach
  • 1 cup orange juice
  • 1/2 cup milk
  • 1 cup frozen peaches
  • 1 cup frozen mango
  • 1 orange, peeled

Instructions

  1. Layer in a blender in the following order: milk and OJ, orange, frozen fruit, spinach.
  2. Blend on "smoothie" setting.
  3. For manual setting, blend on low 10 seconds then increase speed every 10 seconds until desired consistency.
  4. Serve immediately.
