Criminal Minds and muffins

First things first..anybody else REALLY creeped out by tonight’s episode of Criminal Minds? I’m still sore over J.J. getting axed from CBS and I almost boycotted tonight. But, I love the show too much. Rest assured I’m not going to help any elderly men asking for help. I may be sleeping with the lights on tonight.

Thanks to those who offered suggestions on my latest problem with exercise nausea. This morning, I tried something different. I made a peanut butter/fruit spread sandwich with a wheat thin. I cut in half and ate one piece in 3 big bites with 3 gulps of water. It helped a lot. We did a lot of running and weights and I had some extra energy and everything stayed where it was supposed to. I’m going to try that again in the morning. I do need more for breakfast after I get to school. I’ll try the loaded oatmeal.

Now on to criminal muffins.

These are so good and I don’t know why I don’t make these all year.

Pumpkin Chocolate chip muffins.

  • 4 eggs
  • 1/2 cup oil (or substitute applesauce for this too)
  • 1 cup unsweetened applesauce
  • 1 (16 ounce) can pumpkin
  • 1/2 cup brown sugar (optional. I didn’t use this)
  • 3 cups flour ( I used wheat flour)
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 cup of ground flax seed (added to original recipe)
  • 12 ounces dark chocolate chips (could use any kind of chocolate)
  • Mix the wet ingredients. Add in the dry. Stir. Bake 400* for 15-18 minutes. Makes 24 muffins.

    Pumpkin and chocolate are such a lovely pair! These look incredible. I can't wait to make my first batch of pumpkin muffins for the fall season. :D

    I cant think of a better flavor combo than pumpkin + chocolate except maybe peanut butter and chocolate! Thanks for a great recipe!
