These are the two pieces to my dish cabinet. He built the top, including the molding. The bottom is an unfinished base and he will put these two together to make a large open shelving system for all my dishes and linens. It would have so much easier to go pick out a china cabinet, but I never could find anything with open shelves, deep, tall, and wide. After we decided to refinish a table, I found some pictures of different cabinets that I liked and he built them for me. Now the painting starts.

Because it was Saturday and the big Alabama game was a late one, he was able to watch it after work. I wanted to make something special for dinner, but honestly I didn’t have much energy to do anything but lay around and hack and whine over my painful throat. I wasn’t the picture of thankfulness, trust me.  I did have another jar of sauerkraut, but after the last ordeal with that, I decided another few months could go by before trying that again.

So, I tried something new. Jalepeno Poppers. I had cream cheese, diced chicken and a little bacon. I mixed that and stuffed the peppers. They were really good! I did try one to see how my throat would react and I got a mild one that didn’t burn. I scraped out all the rib and seeds and then rinsed them under running water.

Jalapeño Poppers

  • 6 jalepenos
  • 4 oz cream cheese, softened (lowfat is great)
  • 1 cup of diced chicken breast
  • 2 bacon strips, crumbled or 2 Tablespoons of already cooked bacon crumbles. I would not recommend those gravel-like “bacon bits”.
  • 1/8 cup of shredded sharp cheddar

1. Slice the peppers lengthwise an scoop out the ribs and seeds. Place on a non-stick pan and cook 5 minutes in a 400 degree oven.

2. Combine the cheeses and chicken and bacon. Mixture will be very dense.

3. Stuff the peppers. They will look like little boats.

4. Bake 15 minutes until golden and bubbly.

I may have found another pepper that was just as mild and ate that one, too. I don’t really like these peppers, but found I could tolerate them better if they had cheese and chicken stuffed in them.

I should be thankful more often 😉

For me - these were great because they were easy to make! I was able to get some really good jalapenos that were quite big so I could stuff more in them. These are a great appetizer, but of course, I love spicy so this was perfect for me! They would definitely be perfect for many different occasions, I plan to make them again soon!
