Breakfast, lunch and dinner

This will be short and sweet because….i’m sleepy.

First—Ran 4.5 miles!! I was tired before I got on the dreadmill, but watching Criminal Minds while on the hamster wheel helps a LOT! I did some stretching after. I need a long yoga session in a very bad way. I feel creaky lately.

 

Breakfast-

Oatmeal with banana,

Pure Bliss Gingerbread granola

almond butter!!

flaxseed

milk

Lunch/Snacks to go

Veggies Kitchen Sink Soup

Turkey/cheddar roll ups

almonds

carrots and almond butter

apple and any leftover almond butter

lunch

 

 

Dinner-I’m attempting a butternut squash. I saw this on Ashley’s site and thought it sounded wonderful. Lemme just say that if it wasn’t for the prep involved, I would eat this a lot more. This was unbelievably good. Actually, the prep wasn’t bad, I just need to make sure I have a very sharp knife. Prep time was maybe 10 minutes total, but cutting it was tricky.

Peel, slice into 1” rounds, then cube. Toss with chopped parsley, garlic, s&p, and a little olive oil to coat the cubes. Bake at 400* for about 45min.

I love trying new veggies, especially ones that Stephen can grow in our own garden. Butternut squash will join the tomatoes, cucumbers, pumpkins, and flowers.

I love your "snacky style" lunch. Getting a bunch of flavors in always makes for a satisfying meal, in my opinion. :D

Butternut squash is so yummy, isn't it? We grew some in our garden last year, and the flavors are out of this world when they're freshly picked. And best of all, they last a couple months which means you can eat them well into the fall and early winter. :D
